Hatzakis’ research interests include applications of liquid and solid-state NMR Spectroscopy in food science, structure determination and metabolomics. He is developing analytical tools to understand the factors that affect food composition and quality, as well as to establish agronomic and processing strategies to improve the nutritional value of foods. He also focuses on the development and characterization of value-added products from food wastes, and he utilizes a multi-disciplinary research approach combining spectroscopy, metabolomics, gene expression profiles and microbial analysis to investigate the interaction between nutrition and gut microbiota. Hatzakis received his BS in chemistry, MS in organic chemistry and PhD in food analysis from the University of Crete, Greece.
